Red Lentil Soup is very simple to prepare. Red Lentils are quick to cook compared to traditional brown lentils. This soup is great plain, or can have an extra kick added with lemon juice or red pepper flakes.
Serve with some bread and you have a very filling and satisfying dinner made easy!
INGREDIENTS:
- 1 - 2 large onions, coarsely chopped (depends on how much you like onions!)
- 2 tablespoons olive oil
- 1 1/2 cups red lentils, cleaned
- 8 cups water
- 3 chicken bouillon cubes
- 1 teaspoon salt (more or less to taste), optional
- lemon juice for
- Caramelize onions in olive oil over medium heat in Dutch oven.
- Add water, red lentils and bouillon.
- Bring to boil.
- Reduce to a simmer, stirring occasionally, until lentils are tender (approximately 20 - 30 minutes).
- Season as desired with salt, lemon juice or red pepper flakes to taste.

i think god intended for lentils to be a soup ingredient--they're perfect! great recipe. :)
