Skin-On Mashed Potatoes

Sometimes we crave a traditional 'Meat and Potatoes' meal. Skin-On Mashed Potatoes is the perfect side to Barbecue Meatballs.

The red potatoes in this recipe are not peeled, making them much easier and faster to prepare compared to traditional mashed potatoes. Plain yogurt takes the place of sour cream, making it a bit more healthy. If you are trying to sneak in healthier ingredients to your family's meals, here is your opportunity!




INGREDIENTS:

  • 1 1/2 pounds red potatoes
  • 1 cup non-fat yogurt
  • 1 teaspoon salt (more or less to taste) 

DIRECTIONS: 
  1. Wash potatoes and boil 30 minutes or until tender.  (Slice the potatoes to make them cook faster.)
  2. Drain potatoes.  
  3. With an electric mixer, blend cooked potatoes, yogurt and salt.
