Individual Heirloom Tomato Caprese Salad

Summer is in full swing! Celebrate with making Individual Heirloom Tomato Caprese Salad...simple, delicious, beautiful and fun!



There was a stand at the farmer's market last weekend that had the absolutely most gorgeous heirloom tomatoes. I could not resist! I selected two perfect ones, paid $7 and walked away wondering to myself, "Why would I pay $7 for two tomatoes?"



The tomatoes sat on the kitchen counter for a couple of days, then I decided to transform them into individual 'salads.'  Individually plated Heirloom Tomato Caprese Salad is a fabulous salad course or can be made into a larger portion for a wonderful summertime meal. 

Originally, we were going to have our salads and then wait for the weather to cool off to grill some steaks. The salads were satisfying enough on their own, so we still have steak in the refrigerator begging to be grilled soon.

I no longer have 'buyer's remorse' for spending $7 for two tomatoes. Well worth the money! 

The ingredients to make caprese salad are simple: tomatoes, fresh mozzarella cheese, basil, salt and extra virgin olive oil. 

Simply slice the tomatoes and fresh mozzarella and plate as desired. Sprinkle with a little salt (or not, to suit personal taste), drizzle with extra virgin olive oil, and sprinkle some sliced (or chopped) fresh basil.

Girl, those tomatoes are GORGEOUS! I would have paid twice that for these. These caprese salads are the perfect use of such beauties in their most natural and stunning state!

I have a shopping rule: if I buy something expensive on vacation, I never allow myself any reset when it comes home. It is the same at the farmers market: I never regret an expensive tomato (cheese, bread, etc.) as long as it is good. This salad is perfect, Cali, and one of our favorites when the heirloom tomatoes are at their peak!
