Red Lentil Soup

Red Lentil Soup is very simple to prepare.  Red Lentils are quick to cook compared to traditional brown lentils. This soup is great plain, or can have an extra kick added with lemon juice or red pepper flakes.  

Serve with some bread and you have a very filling and satisfying dinner made easy!

Skin-On Mashed Potatoes

Sometimes we crave a traditional 'Meat and Potatoes' meal. Skin-On Mashed Potatoes is the perfect side to Barbecue Meatballs.

The red potatoes in this recipe are not peeled, making them much easier and faster to prepare compared to traditional mashed potatoes. Plain yogurt takes the place of sour cream, making it a bit more healthy. If you are trying to sneak in healthier ingredients to your family's meals, here is your opportunity!

Barbecue Meatballs

Most people think of Italian-style Spaghetti and Meatballs when they think of meatballs. If you have not given Barbecue Meatballs a try, please do! Cali's Cuisine has adopted this recipe many years ago from a friend in Kansas. The recipe was modified to include more sauce. The secret is in the sauce! (A favorite line from Fried Green Tomatoes.) 

Served with potatoes and salad, this is a hearty meal to serve your family.  Bon appetite!

Cauliflower Leek Soup

If you had the opportunity to give Roasted Cauliflower a try and liked it, take it a step further and prepare Cauliflower Leek Soup.  This is an easy and healthy weeknight dinner to prepare.

You may find using an immersion blender for pureeing soup much easier than using a blender since you do not have to transfer the hot soup to a blender and then back again to the saucepan.  The immersion blender will give you a much easier cleanup!

Note: Roasted Cauliflower and Asiago Cheese were utilized as a garnish in the photo above.

Beef Stew

Beef Stew is often prepared with a tomato base, but this recipe contains no tomato.  The 'gravy' is a balanced combination of red wine and beef broth flavored with fresh thyme.  Choc-full of mushrooms, carrots, potatoes and tender beef, this stew is a winner!  One of the secrets to great stew is using chuck roast rather than stew meat.  

This is an easy dish to prepare, but is does take time to 'stew' to allow the flavors to fully develop.  This stew is great served with cornbread on the side.  Warm stew on a cold winter's day is very comforting!
